Assess maturity for a stated crop,market and use. Physiological maturity,harvest maturity and eating ripeness differ. A mature-green fruit may be suitable for one supply chain but not another. Choose representative samples and record cultivar,source,date and intended destination.

Useful indices can include days from flowering,size,colour,firmness,soluble solids,acidity,dry matter or specific crop traits. No single index applies to every fruit. Colour alone can be misleading in shaded fruit or certain cultivars; combine validated indices for the stated crop.

A refractometer reading is commonly expressed as°Brix and approximates soluble solids in juice; it is not a complete measure of nutritional quality or all sugars in every matrix. Firmness measurements depend on probe,peel treatment and position. Record methods so samples are comparable.

Climacteric fruit may ripen after harvest if physiologically capable; non-climacteric produce generally needs suitable quality at harvest. Neither category excuses harvesting immature produce.
